Bell Pepper Freezer Prep

Preparing peppers for freezing:

Here's a great idea for quick food preparation.  If you are a gardener, this is a great idea to preserve your hard gained crops.  I remember my Mom would do this because being from the south, most of her dishes would generally start with a mirepoix, which is traditionally 3 vegetables diced to start a dish like a gumbo, or a sauce of some sort.  A traditional mirepoix usually consisted of celery, carrots, and bell peppers - diced.  Her's would consist of onions and bell peppers - diced.  I got this idea by watching her and my Aunt Betty in the kitchen.

TIP:  If you are not a gardener you can also buy organic bell peppers from the grocery store or farmer's market, but that can get pretty pricey, which is why I decided to grow them in the first place.  It is a very simple 7-step process.  Here is the step by step process to freezing them:

Step 1: Pick your peppers!  These just happen to be from my organic garden.  Give them a thorough washing to remove any dirt.

Step 2: Cut the peppers in half first and seed them.  If you are a gardener, return the seeds and scraps to your compost heap to keep the nutrients in the soil.

Step 3: After cutting the peppers in half, dice all the peppers and put them temporarily into a bowl.

Step 4: Spread a very thin layer of olive oil onto your pan so that the vegetables do not stick.

Step 5: Throw the diced vegetables onto the pan and spread them evenly over the pan so that they are in one single layer.

Step 6: After filling the pan, place the pan into the freezer and wait for a thin white layer of ice crystals to form over them.  This does not damage the flavor and it helps to keep them from clumping together when you put them into a freezer bag.

Step 7: Bag your peppers and store them into your freezer.

It's generally easier to finish the entire step first for your whole crop before moving onto the next step.

Some ideas for using the peppers is adding them into soups, or you can saute them in the morning and add your egg whites to them for flavor.  Red peppers add antioxidants and have twice the amount of vitamin C than green and 9x's higher carotene than green.
