Farro

When I first heard the name of this grain, I thought it was in reference to the rulers in Egyptian times.  I had no idea that it was the name of a healthy grain.  Once I had experience with it in a good recipe, I became a fan of it.

Farro is truthfully one of those grains that I often forget about until I rummage through a health food isle and am reminded of it, or if I get a hankering for a different taste or texture.  It's a great alternative if it's become habit for you to avoid pasta, because farro is a grain that when it is cooked properly has the same "al dente" mouth feel as a pasta if pasta were cooked al dente. 

Farro is a grain that is taken from Tuscan cuisine that has a sweet, nutty flavor and chewy bite.  If you were to go to Italy, it would be available to you in three sizes: farro piccolo, farro medio, and farro grande.  In the United States, it is only the medium size that is available.
