Clean Eating Stir Fry
Stir fry is the most simple thing to make quickly. The problem with it is trying to create a sauce that is both healthy and qualifies as a clean eating recipe. Well, I think this qualifies as that, and I hope you think so too once you try it!
I generally create the same recipe over and over again, with the only exception maybe are the vegetables.
I like my stirfry sweet, tangy and spicy most of the time. Play with the ingredients and see what you can come up with yourself. This is for a single serving. Warning: This is super YUMMY!!
- 1 tsp of coconut oil or high cooking heat oil
- 6 oz chicken
- a couple of handfuls of all the veggies of your choice (I used what I had on hand in this pic, which was organic broccoli, organic onions, and my own home grown bell peppers)
- 1 clove fresh or jarred garlic clove equivalent
- 1 slice of ginger root to taste or jarred ginger paste to taste
- 1 tbsp of any kind of vinegar except balsamic
- 1 packet of stevia
- 1/2 of a freshly squeezed lemon or lime
- red pepper flakes (optional)
- Start by adding and heating the coconut oil until a drop of water sizzles across the pan when you put it in. Stirfry your chicken stirring constantly and adding salt and pepper until done.
- Add in your chosen veggies and continue to toss for 2-3 minutes
- Add in garlic, ginger, vinegar, and stevia and continue to toss until the mixture is coated with the added ingredients.
- Squeeze in the fresh lemon or lime to coat mixture.
